I've been trying to think of something suitable for that cooking method all day. I tend to marinate overnight then cook on the grill or in a non stick pan so most things I make have a 'crust' to make them taste 100%

EG, my FAVOURITE sauce/marinade for steak and salmon currently is a toasted sesame one.

2-3tbs toasted sesame seeds
1tbs sake
2tbs light soy
1tsp sugar
1 clove crushed garlic
1in grated ginger
1tbs rice wine vinegar

Generally does one steak and one bit of salmon (DD shares with us both wink.gif but for it to be really good it needs a nice crispy finish.

The other easy one I do is just orange juice and fennel seeds with salt and pepper on chicken and salmon. Sooooo yummy. That might suit a sous vide better?

This works well with pork - you'll need to adjust quantities to volume and taste as I do this by eye.

2 cloves of garlic (crushed)
2 sprigs of rosemary (just use leaves for marinade)
1 tablespoon of olive oil
1 cup of orange juice
1/4 cup of soy sauce (start of with less and adjust to your taste)
2 tablespoons of honey (you may prefer a sweeter taste) - I warm the honey up and than add to the rest of the ingredients.

You can add a bit of water to bulk it up for larger amounts. I reduce the left over marinade in a pan and serve over the cooked pork chops.
