I have a lovely sweet potato muffin recipe at home, using buttermilk, I always add/substitute other vegies though. Will grab it later.

2 cups SR flour
1 cup grated cheese
90g butter, melted and cooled
1 egg, lightly beaten
3/4 cup buttermilk
salt and pepper to taste.
1. Preheat oven to 180 (160 FF) and grease 12 deep muffin cups
2. Sift flour into bowl (never do this!) and mix in sweet potato and cheese. Make a well in the centre.
3. Add butter, egg and buttermilk and salt and pepper. Stir in until just combined, do not overbeat.
4. Spoon into prepared tray and bake for about 25 mins, or until golden brown.
I will also put in grated zuchinni, carrot, purple or white sweet potato, parsnip, whatever I have that grates easily really. They really are best eaten once they're out of the oven. I have frozen them and they're ok, just not as good!

Regarding the sifting, I am so programmed to sift my flour that even if the recipe doesn't ask me to do it, I can't bring myself to dump a load of unsifted flour into the mix

I ended up making these the other day and they turned out pretty well too. I'm going to experiment with a few different flavours and see how I go
