Thinking about making some savoury muffins for DS to take to daycare and for me to take to work tongue.gif I have a few ideas, but thought a few people might have some tried and tested favourites that the kiddies (and parents) will happily eat? Any suggestions?

Do you have any restrictions on what you can put in them?

I have a lovely sweet potato muffin recipe at home, using buttermilk, I always add/substitute other vegies though. Will grab it later.

Hi, no restrictions at all and the sweet potato muffins sound great! Would love the recipe Windsor if you get a chance... I actually have some sweet potatoes needing to be used and was going to use them in a salad but the muffins are sounding like a tastier option! biggrin.gif

The most delicious savoury muffin recipe I have is for goats cheese and pesto muffins - they are to die for. They might not be your son's cup of tea though, but I'll find the recipe for you! I'll put it up when I'm at home and can get my hands on it.

1 cup grated sweet potato
2 cups SR flour
1 cup grated cheese
90g butter, melted and cooled
1 egg, lightly beaten
3/4 cup buttermilk
salt and pepper to taste.

1. Preheat oven to 180 (160 FF) and grease 12 deep muffin cups
2. Sift flour into bowl (never do this!) and mix in sweet potato and cheese. Make a well in the centre.
3. Add butter, egg and buttermilk and salt and pepper. Stir in until just combined, do not overbeat.
4. Spoon into prepared tray and bake for about 25 mins, or until golden brown.


I will also put in grated zuchinni, carrot, purple or white sweet potato, parsnip, whatever I have that grates easily really. They really are best eaten once they're out of the oven. I have frozen them and they're ok, just not as good!

That looks delicious and easy Windsor - I just bought a heap of silicone muffin cases from Aldi so am keen to bake more.

Regarding the sifting, I am so programmed to sift my flour that even if the recipe doesn't ask me to do it, I can't bring myself to dump a load of unsifted flour into the mix biggrin.gif

Thanks heaps Windsor, that recipe sounds yummy! When I went to the shops this morning I made sure bought some buttermilk so I might try making them on Sunday afternoon. Hopefully they turn out so I can use them for lunchboxes through the week! Will let you know how I go with them biggrin.gif

I ended up making these the other day and they turned out pretty well too. I'm going to experiment with a few different flavours and see how I go smile.gif

Oh and Squeaza, I'll look into it for you wink.gif biggrin.gif

Best thing about buying buttermilk is buying a big carton and making pancakes too wink.gif
