I was wondering if you know of the recourse available if a hair and make up stylist accepts payment for a trial on the condition they are available on the wedding day, then later says they're not available anymore?

Just because you had a trial does not guarantee that the artist will be available on your date. Usually, make up artists (and I can say this as a makeup artist) will only garauntee your date if you have paid a deposit to secure the date. If you haven't paid a deposit, you have no recourse.
