Chicken thighs in the slowcooker, WWYD?

I've got appointments at the hospital tomorrow afternoon and I want to throw something in the slowcooker so it's minimal effort when I get home. I'm hoping to serve it with rice or couscous.

Ingredients on hand:

Tinned tomatoes
Carrots
Zucchini
Corn kernels
Potatoes
Onions
Pumpkin
Garlic
Cans of chickpeas
Broccoli
Cauliflower

As well a's the usual pantry supplies. So what would you throw together fir maximum tastiness?

have you got some ground cumin?

Tomatoes, carrots, zucchini in chunks and maybe put in later so they're not too mushy, heat through chick-peas at end just to heat through, some cumin and good seasoning at the start and you've got a very classic couscous accompaniment.

Squeeza's suggestion sounds delicious. I think you could also add some of the broccoli (I love broccoli so I add it everything) if you don't I think the cauliflowr would work well with the cumin and the other flavours in the dish.

For another option I found this one in my slow cooker recipe book (it won't use your veggies but I'd probably throw those in anyway). I haven't tried it but it sounds good:

500g diced chicken thighs
1 tin crushed tomatoes
1 onion diced
2 tbsp soy sauce
1 tbsp mustard powder
2 tbsp Worcestershire sauce (optional)
3 tbsp brown sugar
2 tbsp tomato paste
Place chicken in slow cooker. Mix all other ingredients together and pour over chicken. Cook on low for 8 hrs. Serve with rice
