I dont live in Sydney but i would say just about any cake shop should make one for you.

I agree with MrsWhitton2B, almost every cake shop should make them, most places will let you have tastings, yum biggrin.gif , that should help you narrow down the contenders.

My friend did ours, he has a cake and chocolate shop in Turramurra.
Not sure on cost as it was his gift to us.
It was divine.
There is a pic somewhere, let me find it

As I'm also thinking on having a croqembouche as my wedding cake, could you pm the details of the shop....the cake looks fantastic. My wedding is in nov, and i'm a litlle unsure how it will "hold up". When was your wedding? and how did it hold up?

We got ours from a local patisserie - They're pricing was $4 per person, for three profiteroles each (they were golf ball size) but I'm not sure how that compares to other places pricing.

It was delicious, and very impressive visually - We actually had problems with ours, it developed a lean & started to collapse but the patisserie provided a new one when the venue called them. The patisserie told us they are actually more hardy then they look, so long as you don't put them in the fridge or the heat.

I think they're a fab alternative to a cake, everyone was impressed with ours (especially us!)
